This purée is so simple to make & incredibly tasty too.
Spread it on toast or use it for dipping veggie sticks & hunks of bread - delicious!
1 teaspoon harissa paste
2 teaspoons ground cumin
3 tablespoons white wine vinegar
4 tablespoons olive oil
2 crushed cloves of garlic
¼ teaspoon grated fresh ginger
- Peel the carrots and bring to boil in salted water until soft.
- Drain and put into a blender.
- Add all the other ingredients.
- Purée until smooth.
- Chill and serve.
