Spicy Carrot Purée - The bakery by Knife & Fork

Spicy Carrot Purée

 

 

This purée is so simple to make & incredibly tasty too.  

Spread it on toast or use it for dipping veggie sticks & hunks of bread - delicious!

INGREDIENTS:

500g carrots

1 teaspoon harissa paste

2 teaspoons ground cumin

3 tablespoons white wine vinegar

4 tablespoons olive oil

2 crushed cloves of garlic

¼ teaspoon grated fresh ginger

METHOD: 

  1. Peel the carrots and bring to boil in salted water until soft.
  2. Drain and put into a blender.
  3. Add all the other ingredients.
  4. Purée until smooth.
  5. Chill and serve.
