For practitioners: what's in our bread

The Bakery by Knife & Fork is a dedicated gluten free bakery in Deddington, Oxfordshire, baking to order and shipping UK-wide. This page is for practitioners recommending us.

Coeliac safe

100% dedicated gluten free bakery; no wheat flour has ever entered the building; our flours and oats are gluten-free labelled; and Tanya's own family, who are coeliac, eat it daily.

Composition: wholegrain sorghum, buckwheat, millet; seeds; psyllium and flaxseed as binders; long fermentation on the three sourdough loaves. Sugars sit under 0.1g/100g on most of the range, against the refined starches common in a lot of gluten free bread.

We haven't measured glycaemic index; if you'd like samples for testing, ask.

Straight answers

What's in it?
Full ingredients on every product page; bound with psyllium and flaxseed, not gums. Exceptions: sulphites (Apricot), soya lecithin (Chocolate).
Why sourdough?
Sourdough, Seedy Sourdough and Large Sourdough use our own starter, long-fermented; the rest use fresh yeast. Ferment time is not published; ask and we'll tell you.
Delivery and practicalities
UK next-day after baking; not NI, the Highlands and Islands, Channel Islands, Isle of Man or Scilly. From £6.45, freezes well, subscriptions skip, pause or swap any time.

Testing and certification: what we can show today

Allergens and cross-contact
We have: a facility statement (nuts, milk, egg, sulphites, soya) and the Chocolate loaf baked last, separately. Next: a written allergen matrix and third-party audit.
Organic and glyphosate
We have: our flour supplier's assurance the GF grains aren't treated with glyphosate.
FODMAP
Not tested. The only dried fruits in the range are dates (Cinnamon & Date) and apricots (Apricot & Pumpkin Seed). If lab testing would help your practice, tell us.

The bread range

All loaves contain psyllium husk, flaxseed and salt (0.8–1.2g/100g); made in a facility handling nuts, milk, egg, sulphites, soya; vegan except Chocolate & Toasted Hazelnut. Sourdough-base: sorghum, buckwheat, millet, maize, potato, rice. Farmhouse-base: millet, sorghum, buckwheat, maize, potato. Focaccia (dairy, egg) omitted here.

Granola (Date & Walnut, Apricot & Almond): oats stated certified gluten free; 7.0g fibre/100g (High in fibre); not vegan (honey); tree nuts (sulphites in the Apricot & Almond bag). Oat certifier not yet named.

Slice and freeze on arrival; toast straight from frozen. Subscriptions skip, pause or swap any time in the account portal. Free UK delivery over £45.
